When I was little, my mom and Abuelita would make this Peruvian Ponche during the holiday season (Non-Alcoholic version for me). It's a like a drinkable meringue, or their version of a fresh egg nog.
Mom's Peruvian Ponche
1 ounce Pisco
1 egg white
1 egg yolk
Heavy Tablespoon of Sugar
Splash of Vanilla (optional)
Nutmeg for garnish
Step 1:
Crack an egg and separate the white from the yolk. Using a hand mixer, beat the egg whites in a mixing bowl until they from stiff peaks.
Step 2:
Add sugar to egg whites, continue mixing egg whites until they turn shiny, about 1 minute.
Step 3:
Add yolk and splash of vanilla and continue mixing, another minute or so.
Step 4:
Add 1 ounce Pisco and continue mixing for 20-30 seconds.
Step 5:
Pour into a glass and garnish with grated nutmeg.
